Mushroom Delight

Mushrooms are a magical food – a source of vitamin D, a positive stimulant of the immune system, and so-o-o good tasting. Many feasts feature meat as the centerpiece of the meal, yet mushrooms are likely to be far healthier and are considered a delicacy in many parts of the world.
This recipe calls for Maitake, shiitake, and portabellas. They are wonderful, but they may not all be available. Feel free to mix and match: Try to include at least 600 g of high quality mushrooms. You will doubtless find that portabellas are more flavorful than their younger relatives, the buttons and the crimini.
Savory flakes work as well as ground savory and will be even more subtle.
For a special treat consider enjoying the garlic cloves whole.
The ingredient list of this recipe doesn’t include water because 1) although essential, water does not add nutrients and 2) measuring the drained vegetables in soup, for example, and the adding back the broth is much easier than knowing what weight of veggies is in a given weight of soup.

Ingredients
1 tbsp. Mustard seed, yellow
1 tsp. Ginger, ground
74 gram Garlic Powder or to taste
1/2 tsp. Savory, ground
56 gram Garlic, Raw
283 gram Mushrooms, Shitake, frozen, 10 oz.
180 gram Mushroom, Maitake, Raw
150 gram Mushroom, Portabella, Raw, whole
10 gram Walnut, English, dried, raw, USDA: 1 walnut half = 2 g
2 tbsp. Lemon juice, canned or bottled
Steps
1. Add spicing and whole garlic cloves to 2 quarts pure water
2. Bring to a slow boil and cook for 5 minutes
3. Add mushrooms, return to a boil and cook for an additional 3 minutes
4. Remove from heat and serve
Serving Suggestions
Serve as a warm stew with plenty of broth for extra nurturing.
Add 10 g walnuts or less per serving
Add 15 g lemon juice, per serving, or to taste
Serve as Mushroom-Barley Delight
