Chestnuts without so much AGE

“Chestnuts roasting on an open fire, ” and the second line could be: “black , full of smoke, and advanced glycation endproducts!”  Despite the song, that’s not the way the CR Way recommends to eat chestnuts.

But chestnuts taste good and can be a fun addition to a meal. So if you want them and wish to prepare your own, try boiling them. Score them with a serrated knife first, by making a cross on the flat side. Then bring to a boil for 3 minutes. The chestnuts should peel easily. If not, boil a little longer. Remember to keep the nuts that haven’t been peeled in the warm water until you get them.

Add ginger and fennel seed to the water, if you want to give your chestnuts a holiday taste.
